Kenji Takahashi arrived in San Sebastián with the aim of immersing himself in the mysteries of Basque cuisine and then returning to his homeland. However, he chose to settle permanently in this city, where he found similarities in the character of the people with that of his native Japan.
Throughout these years, Kenji has demonstrated his ability to adapt his cuisine to the refined San Sebastian palate. His secret is to value local products, which, although excellent, differ in variety from those found in Japan.
